OAKLAND, Calif. (KTVU) - Bold Food specializes in one of the newest ice cream craze's: liquid nitrogen ice cream.
Here is how to make your own:
What you need:
Stand mixer, liquid nitrogen, sous vide set up , 1 cup milk, 1 cup heavy cream. 6 egg yolks,1/2 cup sugar ,1 vanilla bean pod
What to do:
Split the vanilla pod and scrape seeds from pod.
Mix all ingredients in a blender.
Pour mixture into a sous vide bag, add vanilla pod.
Seal and put in 85 degree Celsius (185 degree Fahrenheit) sous vide water bath for 60 minutes.
Remove bag and chill in an ice bath (water and ice) for 30 minutes.
Pour bag contents into stand mixer bowl. Wearing protective eye glasses and gloves pour a slow stream of liquid nitrogen into the bowl while the mixer is running. Mix until the desired consistency is reached.
You may need to use a kitchen blow torch to release ice cream from the bowl.
Transfer to a container and freeze at least one hour before serving.
Yields 3 cups.
