2 oz watermelon puree
squeeze of lime

Grilled Filet Mignon: to serve 8

8 6 oz pieces filet mignon
Kosher salt and pepper

Grilled chipotle shrimp with lime and fresh mint: to serve 8

1 lb shrimp (24/26 size, or larger if you prefer)
1 small clove garlic, chopped fine
1 teaspoon chipotle puree
zest of 1/4 lime
1 Tablespoon honey
1 Tablepoon olive oil

1/4 bunch fresh mint, leaves washed, picked and rough chopped
Just of one lime

Up to one day ahead:  Marinate shrimp with all ingredients except for fresh mint and lime juice

To Serve:  Grill shrimp just a couple of minutes on each side, sprinkling with kosher salt as you grill.  Don't overcook shrimp.  Once they start to curl up they are done.  Place shrimp on serving platter and sprinkle more salt, a squeeze of lime, and chopped fresh mint on top.  Serve with a bowl on the side to collect the tails.
