2 pieces of bread cubed in ½ cup milk
1 sweet onion, 1 red bell pepper, 3 cloves garlic diced and sauteed
1 Tb tomato paste
1 Tb worcestershire
1 Tb dijon mustard
1 Tb smoked paprika
2 eggs beaten
1 Tb each fresh thyme and parsley
½ cup each shredded parmesan and cheddar
1 ½ pounds ground chuck
1 ½ pounds ground sirloin
Ketchup (for topping on meatloaf)
Thick cut bacon (for wrapping meatloaf)
Combine ingredients through ground siriloin (Do not overmix or meat will get tough!)
Using ⅔ of meatloaf batter, form into a loaf
Make a groove in the middle and add more shredded cheddar.
Use the rest of the meatloaf to seal the cheese in.
Spread ketchup on top.
Wrap in bacon.
Bake at 350 for 1 ½ hours.
Let rest for 10 minutes.
