Zorba's dessert pizza

Dough
1. 1 package (2 1/4 teaspoons) active dry yeast.
2. 1 cup warm (90° to 100°) water.
3. 1 cup ice-cold water.
4. 1 tablespoon sugar.
5. 1 tablespoon salt.
6. 2 tablespoons olive oil.
7. About 5 1/4 to 5 1/2 cups bread flour.
8. Combine and mix-- let rest for 24 hours in refrigerator

Lemon-Ricotta Pancake
• 2 cups 'Pancake Mix'
• 1 cup heavy cream
• 2 eggs
• 2 tablespoons vegtable oil
• 16oz of whole milk ricotta
• Zest of one large lemon
• Combine in large bowl


Meringue Recipe
• 1 cup egg whites
• 1 cup sugar
• whisk vigorously until stiff


Finishing Simple Syrup
• 2 cups Sugar
• 2 cups cold water
• 3 sliced strawberries
• 2 sprigs of mint
• 2 slices of lemon
• combine and boil on med-high heat until reduced to syrup consistency
