Curried Pumpkin Soup

Ingredients:

  • 2 Tablespoons Butter
  • 1 Cup Onion, Chopped
  • 2 Cloves Garlic, Crushed
  • 1 Pound Pumpkin peeled and chopped
  • 2 Teaspoons Madras Curry Powder
  • ½ Teaspoon Salt
  • ½ Teaspoon Pepper
  • 3 Cups Chicken Broth
  • 1 Cup Coconut Milk

Directions:

  1. Melt butter in medium saucepan, add onion and garlic, pumpkin and curry powder. Cook covered 10 minutes or until tender.
  2. Add the broth and bring to a simmer, and cook uncovered for 10 minutes.
  3. Transfer to blender or use stick blender in pot and puree until smooth and there are no chunks.
  4. Stir in coconut milk and season with salt and white pepper to taste.
  5. Garnish with toasted pumpkin seeds.
